What Is the Difference Between Oil-Soluble and Water-Soluble Lecithin Liquid?
The difference between oil-soluble and water-soluble lecithin only worked for different types of fat liquor:
1. The HLB value for oil-soluble is 4 to 5. oil-soluble soya lecithin liquid, it can only be used in oily form.
2. The HLB value for water-soluble lecithin is 9-10. Modified/water-soluble lecithin liquid, it can both used for oily and water forms.
So, water-soluble is more multifunctional compared with oil-soluble, The emulsification effect will be better.
